Chai Almond Butter Cups (Keto)

Makes 12 cups.

Ingredients

Filling:
8 tbsp melted sugar free chocolate
1/2 cup almond butter
1/2 tsp pure chai extract
1/4 cup butter
2 tbsp powdered monk fruit

Topping
6 tbsp unsweetened coconut flakes
1/2 tsp Rootalive Organic Ceylon Cinnamon Powder

Start by melting your chocolate with coconut oil, you will need about 8 tbsps so complete the dozen.

Line a muffin pan with 12 silicone moulds. Pour 1 tsp of melted chocolate into each cup and tilt to line the bottom and 1cm up the edge. Set in fridge or freezer to harden. Mix your other filling ingredients into one bowl.
Once moulds froze, add 1 tbsp of the chai mixture into each chocolate mould. Set back in the freezer for a few minutes , remove them add the remainder 1 tsp of chocolate to the tops.

Mix the coconut and the cinnamon in a frying pan and lightly roast the coconut until golden.

Immediately add the coconut mixture 1/2 tbsp onto the top of each chocolate cup.
