Chai Coconut Cups

Ingredients


For The Cups

1/3 cup softened coconut butter

3 tbsp powdered monkfruit

2 tbsp Rootalive Coconut Oil

2 tbsp ghee

2 tbsp cacao butter

1 1/2 tsp Chai Flavour Extract



For The Topping

4 tbsp unsweetened shredded coconut

1-2 tsp Rootalive Ceylon Cinnamon Powder to taste


Direction

In a medium bowl mix cream together the first two ingredients until smooth.
Melt the next 3 ingredients together in a small pot. Once melted pour into the bowl of coconut butter mixture.
Stir until well combined.
Once mixture well blended add in the Chai Extract. Stir very well use mixer if needed.
Prepare a muffin tin and line with 12 reusable cups.
Scoop 1 tbsp of Chai Mixture into each cup. Makes 12. If there is leftover batter, add small amounts to your cups.
Let cool for a few minutes to room temp, this is the time to make the roasted coconut on the stove top.
Add to medium heat and continuously stir to avoid burning which can happen in the blink of an eye with coconut. Remove from hot pan immediately to avoid burn.
Cups should be cooled, giggle pan to see if film had began to start if so perfect time to add the flaked coconut and dash of cinnamon. Add 1 tsp of roasted coconut and cinnamon powder on top of each Chai Cup









Sprinkle with Cinnamon to taste and enjoy
