Choco Maca Ice Cream Bars

Cool down in the summer with these Choco Maca Ice Cream Bars

Makes 8-10 bars


Ice Cream


1, 400ml can Rootalive coconut milk

? cup raw cashews

2 ½ tablespoons Rootalive cacao powder

2 1/2 -3 tablespoons maple syrup

1 tablespoon Rootalive maca powder

½ teaspoon vanilla extract


Blend all ice cream ingredients in a blender until super smooth. Pour into 8-10 small ice cream bar molds with sticks. Place into the freezer until solid and then peel out of the molds.


Chocolate Coating


1 cup dark chocolate chips

½ teaspoon Rootalive coconut oil


Place both ingredients into a bowl set over a pot of hot water on the stove. Slowly melt the chocolate. Pour it into a cup to help with the dipping of the bars. Dip each bar into the chocolate, let the excess drip off and then place onto a parchment paper lined tray. Sprinkle coconut flakes on top if desired. Place back into the freezer for 10-15 minutes before eating.
