Coconut Turmeric Curry


• 1 tsp Rootalive Organic Virgin coconut oil

• 1-2 Tbsp curry paste, to taste

• 2 cloves garlic

• 1 tsp ginger, fresh

• 1/2 medium onion, chopped

• 1 bell pepper, seeded and sliced

• 1 cup cauliflower

• 1 can Rootalive Organic coconut milk

• 1/2 Tbsp Rootalive Organic turmeric powder

• 1/2 tsp fresh black pepper

• 1 tsp Salt

• 1 tsp lime juice

• 1/2 cup Snap peas, blanched

Serve with protein of choice, if desired - tofu, chicken or shrimp


1. Add coconut oil to a large skillet. Add curry paste, ginger and garlic and sauté until fragrant.

2. Add onion, bell pepper and cauliflower and sauté until softened, about 8 minutes.

3. Stir in the coconut milk, and turmeric and bring to a boil. Reduce heat and simmer until thickened and reduced by about half.

4. Stir in salt, black pepper, and lime juice. Add in snap peas. Serve with rice and garnish with fresh chopped cilantro.
