Lemon Poppyseed Banana Flour Muffins

Ingredients:

Yields 4 muffins


Icing

  • 1 tbsp lemon juice
  • ½ tsp poppy seeds
  • ¼ cup plus 2 tablespoons icing sugar

Instructions

  1. In a medium bowl, mix the non-dairy milk and lemon juice together. Let sit for at least 5 minutes.
  2. Make the flax egg by combining the flax and water. Let sit for at least 5 minutes.
  3. Combine the flour, ground oats, poppyseeds, baking powder, baking soda, lemon zest, and salt into a large bowl.
  4. Add the vanilla, and coconut oil to your medium bowl of wet ingredients. Mix.
  5. Add the flax egg and wet ingredients to the dry ingredients. Don’t over mix.
  6. Let the batter sit for at least 20 minutes. At this time preheat the oven to 350 F.
  7. Line a muffin pan with baking cups. Transfer your batter into the baking cups. Bake for 20 minutes.
  8. Drizzle your icing on top. Enjoy! Best enjoyed straight out of the oven.
