Low Carb Gluten Free Flatbread

Try this gluten free, vegan, low carb Flatbread for your next meal with toppings of your own choice!

Ingredients

1/2 cup blanched almond flour
1/3 cup Rootalive Organic Coconut Flour
2 tablespoons Rootalive Organic Psyllium Husk Powder
1/8 teaspoon salt
3/4 cup boiled water
Directions


Whisk the dry ingredients together. Sift if lumpy.
Add the water and stir all together working quickly as it will start to thicken up quickly.
Divide into 3-4 pieces and roll into a ball. Sprinkle a bit of extra coconut flour on the counter.
Place a ball on top. Press down with your hand.
Sprinkle the dough with coconut flour and use the rolling pin to flatten the dough out to a bit thinner than 1/4".
Use a fork to prick holes into it.
To cook, heat a frying pan over medium heat. Add a piece of dough and let it cook on each side for 5-7 minutes, checking the bottom every few mins.
Top with toppings of choice and then place under the broiler until the cheese has melted.
We topped the flatbread with cilantro pesto, seared cherry tomatoes, and white cheddar cheese.
